Departmental Overview

In the Division of Student Affairs and under the Residential Student Services Programs portfolio, Berkeley Dining is a self-operated dining program focused on culinary excellence, social responsibility and supporting the living/learning environment of our customers. With more than 12,000 meal plan holders, Berkeley Dining serves over 5 million meals per year in 14 facilities with a combination of residential "all you care to eat" dining, retail "a la carte" dining, training table, early childhood education meal production and catering. Berkeley Dining services the campus seven days per week, seventeen hours per day employing 450 full and part time staff and approximately 400 UC Berkeley student workers across multiple locations.

The Berkeley Director of Retail & Campus Restaurants is responsible for managing all aspects of the food and beverage services in the department, ensuring high-quality offerings, exceptional customer service, and efficient operations. This role requires a combination of strong leadership, strategic planning, and operational execution to meet the diverse needs of students, faculty, staff, and visitors. The Director of Retail & Campus Restaurants plays a critical role in shaping the dining experience and contributing to the overall campus community. By overseeing operations, driving innovation, and prioritizing customer satisfaction, this position helps create a vibrant and inclusive food culture that enhances the university's reputation and supports the success of its students, faculty, and staff. The Director of Retail & Campus Restaurants will be successful through analyzing customer feedback and trend data and will apply key data points to future dining service models. They will assist units in developing annual budgets as well as meeting/adjusting projections. They will ensures that all dining units are meeting customer service, quality, and food safety standards.

Responsibilities

Strategic Planning:

  • Develop and implement strategic initiatives to enhance the university's food and beverage services aligning with the institution's mission and goals.


Financial Management:

  • Prepare and manage budgets for food and beverage operations including: revenue forecasting, cost control, and financial analysis.
  • Maximize the profitability of operations while maintaining competitive pricing and value for customers.


Menu and Concept Development:

  • Collaborate with the culinary and management staff to create diverse menus that cater to the preferences and dietary needs of the university community.
  • Monitor food trends and incorporate new concepts and ingredients to keep offerings relevant and appealing.
  • Develop new restaurant concepts for new build outs and existing operations.


Operational Oversight:

  • Communicates and implements the Berkeley Dining vision, mission, goals, objectives, and strategic plans through direct reporting managers and with staff, including but not limited to, promoting environmentally sustainable practices, such as waste reduction, recycling, and locally sourced ingredients and support initiatives related to food security, hunger relief, and community engagement.
  • Oversee the day-to-day operations of retail dining facilities including: campus restaurant locations, coffee shops, food courts, and retail outlets.
  • Ensure compliance with health and safety regulations, sanitation standards, and industry best practices.
  • Implement efficient workflow processes to optimize productivity and minimize waste.
  • Drive a university vehicle to visit retail locations, participate in overseeing special events, and support operational needs such as transporting staff or food items.


Leadership and Development:

  • Support recruitment and supervision of food service staff, including Sous Chefs, Cooks, Food Service Workers, and Cashiers, by managing and coaching a team of General Managers (GM), Assistant GMs, and an Executive Chefs.
  • Foster a positive work environment that promotes teamwork, professionalism, equity, diversity, inclusion and belonging, justice, and customer service excellence.
  • Work with the Training Coordinator to support and provide ongoing training and development opportunities to enhance employee and managerial skills and performance.
  • Working with the management team, evaluate and make recommendations regarding headcount per unit and scheduling of staff.


Customer Service:

  • Monitor customer feedback and satisfaction levels through surveys, reviews, and direct interaction.
  • Address concerns and complaints from staff, other campus partners, and patrons promptly, implementing coaching, training, or corrective actions as needed to ensure a positive dining experience for all patrons.


Required Qualifications

  • Strong verbal and written communication skills in English.

  • Proven excellent decision making and reasoning skills.
  • Strong computer application skills.
  • Ability to think critically and the exceptional ability to prioritize competing priorities, communicate with stakeholders, and ensure effective time management.
  • Ability to develop original ideas to solve problems and perform operations and quality control analyses.
  • Proven excellent and effective interpersonal and work leadership skills.
  • Previous experience motivating and inspiring teams.
  • Knowledge of food safety regulations and sanitation standards.
  • Proven proficiency in budgeting, financial analysis, and cost control in a university or large-scale institutional setting.
  • Familiarity with industry trends, best practices, and emerging technologies.


Education/Training:

  • Bachelor's degree in Hospitality Management, Food Service Administration, Business Administration, or related / or equivalent experience / training


Preferred Qualifications

  • Previous experience in food service management in a university or large-scale institutional setting.
  • Previous experience opening new restaurant/food locations or developing restaurant/food retail concepts.

Under California law, the University of California, Berkeley is required to provide a reasonable estimate of the compensation range for this role and should not offer a salary outside of the range posted in this job announcement. This range takes into account the wide range of factors that are considered in making compensation decisions including but not limited to experience, skills, knowledge, abilities, education, licensure and certifications, analysis of internal equity, and other business and organizational needs. It is not typical for an individual to be offered a salary at or near the top of the range for a position. Salary offers are determined based on final candidate qualifications and experience.

The budgeted salary or hourly range that the University reasonably expects to pay for this position is $115,000.00 - $136,700.00. This position is exempt, paid monthly.

  • This is a full-time (40 hours/week), Career position, eligible for full UC benefits.
  • This position is not eligible for Visa sponsorship.
  • This position is on-site at the University of California, Berkeley.
