Overview

Tufts Dining is a self-operated food service provider managing a comprehensive collegiate food service program on the Tufts University Medford-Somerville campus delivering high quality, contemporary and innovative food and hospitality services to meet the various needs of students, faculty, staff and visitors in a fiscally responsible manner. Our team operates a progressive resident dining program for approximately 4000 students as well as responsive retail services and a distinctive university catering program serving the campus community totaling 5100 undergraduates, 1700 graduate students, and 2300 faculty, staff and administrators.


What You'll Do

The Pastry Chef will possess artistic ability and creativity, knowledge of ingredients and attention to detail in a commercial kitchen. They will possess an understanding of how ingredients come together and flavors and textures taste and blend. They will supervise the scaling, processing, baking, finishing and preparation for delivery of a high volume of breads, doughs, pastries, cakes, cookies, and other baked goods and desserts using a variety of production methods. They will supervise daily bakery operations and coordinate the work of the bakery team. They will collaborate with the Unit Manager and provide input when writing PDPs, Checkpoints and Annual Reviews for the staff. They will assign work according to production records; schedule production to meet established deadlines; ensure formulas are accurate, correct and are followed precisely; utilize inventory and resources appropriately; ensure quantity and quality of finished product; evaluate taste, texture and appearance of finished product, report sub-quality product to management prior to shipping and analyze and recommend solutions to production or quality problems. They will ensure the bakery and all related storage areas consistently meet sanitation and food safety standards; assist with weekly bakery inventory and ordering; monitor equipment performance and report problems. They will contribute to the development of the bakery menu and will create, test and produce new products in-line with department objectives. They will provide on-going coaching and training to bakery staff to improve skills and expertise.


What We're Looking For

Basic Requirements:

  • 10 years of high-volume baking experience.
  • Bachelor’s Degree in Hospitality or Culinary Arts.
  • Skilled decorator and finisher.

Preferred Qualifications:

  • 5 years of experience supervising bakery operations and/or employees.
